Sterols are a group of compounds found in plants and animals that are necessary for a wide range of functions. The most common sterol in the human body is cholesterol. Cholesterol is an essential component of cell structure and plays a crucial role in the synthesis of vitamin D and bile acids.

Plant sterols occur naturally in vegetable oils, cereals, nuts and seeds and have been shown to be crucial for maintaining healthy cholesterol levels. They are structurally similar to cholesterol and have been found to have health benefits by partially preventing the reabsorption of good cholesterol from the digestive tract.

Cholesterol is naturally secreted by bile to aid digestion. However, good cholesterol is then reabsorbed in the digestive tract. The purpose of plant sterols is to prevent reabsorption, and they therefore have properties that affect blood cholesterol levels even when consumed in very low cholesterol diets.

Modern diets are often poor in plant sterols and therefore some foods, such as margarines, are often fortified with sterols. Such fortified foods do change our daily intake of plant sterols, but for many people this may not be enough.

Good cholesterol (high density lipoprotein – HDL) carries bad cholesterol (low density lipoprotein – LDL) out of the blood and prevents it from building up in the arteries. The build-up of bad cholesterol in the arteries causes cardiovascular disease. If you have your cholesterol measured, be sure to measure your good, bad and total cholesterol levels.
